Vineyard Notes
This vintage was significantly cooler than normal years, leading to a late harvest for the region. Paso did not see it’s first heat wave until early July, which pushed harvest back, but allowed a longer fruit hang for the grapes - which is great for the quality!
Winemaker Notes
Slow cold fermentation to avoid heat and oxygen. Fermentation is done in stainless steel for 2 weeks at 58-62 degree Fahrenheit to promote and retail thiols. The wine is aged in stainless steel barrels for 5 months to preserve intensity.
