What is Pét-Nat?
Pét-Nat is short for the French term, Pétillant Naturel. It can also be known as Méthode Ancestrale, as it is considered one of the earliest forms of sparkling winemaking. This is a method where the fermentation is interrupted by bottling the wine. Winemakers drop the temperature to pause the fermentation process as yeast prefers warm temperatures. Once the wine is bottled and fermentation continues, the CO2 is captured in the bottle, making it bubbly! This differs from champagne and other traditional method sparkling wines, which go through a second fermentation when winemakers add sugar and yeast to create a second fermentation. Pét-Nat therefore relies on the yeasts and sugar already in the juice to do a natural fermentation.
How is Pét-Nat different from other sparkling wines?
With Pét-Nat being a natural sparkling wine, how will this change the character of the bubbly? To start, the bubbles can vary depending on the winemaker’s choice in stopping fermentation. They may not be quite as effervescent as a champagne wine. Another difference is that Pét-Nat can be more cloudy in appearance. It is not a fault, but just a result of fine carbonic acid. It can have a little more unusual notes and aromas as a result of the natural process. In our minds, unique wines equal fun.
One great benefit of Pét-Nats is that they can be less expensive than esteemed sparkling wines coming from Champagne or Napa. We know Dom can be an investment at $220-$400 per bottle. Most Pét-Nats are going to be $20-$40, which makes this much more approachable to wine consumers.
