Mussels on the Half Shell Paired with 2017 Sauvignon Blanc

Open-face mussel on its half shell topped with panko bread crumbs, sugar cane sap, miso and tarragon.  Baked until golden and crispy. 

Peek-a-boo Wagyu Paired with 2016 Silken

Wagyu steak served inside a crispy parmesan cannoli. Served on top of truffle mustard Vichyssoise sauce and quick pickled parsley.

Vanilla Bean and Persimmon Panna Cotta Paired with 2016 Estate Cabernet Sauvignon

Creamy vanilla bean panna cotta topped with persimmon puree and creamy milk chocolate shavings.
